WINEMAKING
Cabernet and merlot parcels were selected for fleshiness and depth of fruit
intensity. The cabernet and merlot juices were then fermented
separately,
before undergoing further
maturation in oak barrel. Blending commenced in the following spring,
with a
final blend of 65% Cabernet Sauvignon to 35%
Merlot, matured for a further 12 months in oak barrel
prior to bottling.
TASTING NOTE
This Cabernet Merlot is a typical Margaret River blend exhibiting deep
blackcurrant, mulberry, plums, and violet, carrying through sweet
cedary oak.
There are fine soft tannins with sweet dark fruits,
cinnamon spice and rich chocolate highlighting the palate.
